A few years ago I stumbled across Deliciously Ella's blog. She hadn't yet launched a cook book and wasn't yet a "big thing".
I came across her blog whilst looking for healthy treat recipes and got hooked on her food, particularly her banana ice cream, brownies and granola.
Breakfasts were a HUGE deal for me pre baby and I would bake my own Granola every Sunday night for the week ahead, stopping off at the shops near work to buy yogurt, fruit (Strawberries, Raspberries, Bananas, Blueberries), raw honey and pumpkin seeds for the top :)
Colleagues would laugh at my mound of food... But, it genuinely kept me full until lunch and my skin and weight agreed with the choice :)
Since having my son I've stopped my breakie regime entirely. But today I decided to bake up some of my fav granola for this week.
Deliciously Ella recommends:
2 mugs of jumbo rolled oats
1 mug of pecans
1/2 mug of almonds
1/2 mug of flax seeds
1 mug of pumpkin seeds
1 mug of sunflower seeds
3 tablespoons of maple syrup
3 tablespoons of coconut oil
3 teaspoons of cinnamon powder
(+ raisins- but I don't like them!)
After blending / crushing up the pecans and almonds, you basically put all the seeds, oats and nuts in a bowl.
You heat the coconut oil and maple syrup, adding the cinnamon, and melting down into a runny syrup
You pour this over the mix and make sure it's all coated.
Then you whack it in the oven for 30 - 45mins at about 180 degrees (fan oven).
I love it and have adjusted the recipe over the years to try other nuts and seeds etc.
Only bad thing is it's an expensive thing to make - but I got all my ingredients from Holland & Barrett up on the Broadway as a 'buy one get one 1/2 price'.
