Lasagna for dads visit

Dad came last night and, with it raining and cold outside, I wanted to make something warming and comforting.

At Christmas I brought my husband a mega treat of a big Le Creuset pan and, after being inspired by Chris Kitch's veg lasagna (which they bake in theirs), I decided to stuff ours full of the meat and cheese layers :)

I went to Muswell Hill Sainsburys and stocked up on:

450g minced beef

450g sausage (removing the skins to just leave the mincemeat)

1 red onion

2 garlic cloves

Fresh basil

A tub of Ricotta

500g of grated mozeralla

A box of lasagna sheets

800g chopped tomatoes

I also already had some: dried oregano, onion flakes, garlic granules.

I firstly cooked up the red onion, mince and sausagemeat, adding the basil and chopped garlic + all the dried herbs with 125ml of water and seasoning with tons of black pepper. I adjusted the quantities of each after a quick taste.

I let it simmer for about 15 mins and then stirred in the chopped tomatoes and seasoned (I also added a teaspoon of sugar... shhhh)

I then got on with the fun bit... I smeared a layer of the meat mix of the base of our pan and added the lasagna sheets to cover.

On top I spread a layer of ricotta and sprinkled the mozeralla.

I repeated the same again finishing with a small layer of the meat on top with dollops of ricotta and a sprinkling of cheese.

I baked it for about 45mins at 190 degrees and then took it out, sprinkled some more cheese, and popped it back in for another 5 mins or so.

I served it up with a big bowl of peas covered in mint and butter.

Let's just say, it all got eaten. Although I wish I had made the meat a bit more saucy! It looked the part though :)
