I made mince pies!
Now, I am not good at cooking and like to follow a recipe for everything... But I went all out this year, and have made mince pies for the first time... With no recipe!
I went and brought 3 types of pre rolled pastry - filo, puff and shortcrust - and a few jars of Robertsons Mincemeat.
I then popped into 'The Scullery' and brought 2 sizes of muffin tins and a cupcake tin.
Next I got experimenting....
For all of the filling I grated 1 Apple, the zest of 1 clementine and chopped dried cranberries into the Mincemeat.
I made some traditional looking pies, with shortcrust bases and star tops (baking for about 15 mins at 180 degrees).
I then made some filo and puff pastry versions - I lined a pre greased cupcake tin with filo pastry (laying sheets flat over the whole tin and pressing into the holes).
I spread the Mincemeat on the puff pastry and rolled it up lengthways, cutting discs from the roll and stuffing them into the cupcake tin holes (and filo).
I finished with a sprinkle of flaked almonds and baked until the pastry turned brown. Once cooled I snapped the filo out of the tray.
I then finished them all off with a sprinkle of icing sugar.
The neighbours seemed to like them and I found them so easy to make- I think I'll make jam tarts next!
