An Avocado lunch
This book is simply beautiful... I must admit I haven't made much from it, but it looks too pretty to not include on our bookshelf.
This is a recipe I've made a few times though... On days I don't have much time, need to make the most of the food I've got and want to feel a little healthier.
To serve 1 I used the below:
50g frozen peas
About 40g feta
1 tbsp of lime juice (I used the juice of a lemon today as had no lime)
1 tbsp of olive oil
Bunch of mint (I used dried mint today)
1/2 garlic clove all crushed up
You pop all of the above, except the avocado, into a food processor.
Cut the avocado in half, de-stone, and pop the mixture on top.
Then grind a bit of black pepper, and drizzle some oil and lime juice, to finish off.
